Sfoglini Vesuvio Pasta brings serious sauce-holding power and a little Italian-inspired fun to pasta night. Created in collaboration with Dan Pashman, three-time James Beard Award winner and host of The Sporkful food podcast, this distinctive pasta shape is inspired by the swirling contours of Mount Vesuvius in Naples, Italy.
Vesuvio's ridged, spiral shape isn't just eye-catching. Its curves, grooves, and folds create plenty of places for sauce to cling, helping deliver more flavor in every bite. Like all Sfoglini pasta, Vesuvio is bronze die extruded, a traditional pasta-making technique that creates a rough, porous surface that grabs onto sauces better than the slick surface of many mass-produced pastas.
The shape was designed around three important qualities: "sauceability," or how well it holds sauce; "forkability," or how easily it stays on your fork; and "toothsinkability," the satisfying texture you experience with every bite. The result is a hearty, versatile pasta that's especially good with chunky tomato sauces, creamy sauces, pesto, ragù, and recipes packed with vegetables or crumbled sausage.

Knife Sharpening
Browns Kitchen offers knife sharpening at 75¢ per inch of the blade. We are able to sharpen most kitchen knives, including serrated blades. We are unable to sharpen scissors, pocket knives, and ceramic blades. When you bring your knives in, a team member will do a brief knife consultation where they examine the knife brand, style, and existing condition to assess if we are able to sharpen your knives using our equipment. We try our best to have a 24 hour turnaround time, but it can take up to 48 hours.
