Appetizer: Shrimp Ceviche Tostada w/ Avocado Crema

Entree: Pastel De Choclo (Chilean Beef & Corn Casserole) w/ Mexican Style Rice

Dessert: Apple Cinnamon Empanadas w/ Caramel Sauce

Time to jump into some intense flavors, as Chef Benny prepares to take us all around Latin America and show us some incredibly diverse, unique flavors that you’ll keep around for a while. Starting off, we’ll make some simple tostadas, filled with a light, fresh avocado crema and then topped off with shrimp ceviche made with red onions, lemon juice, and quality shrimp. Then, we’ll jump into a Latin classic of Pastel De Choclo, made with beef and a starchy corn that will caramelize and form a delicious crust over our casserole. Lastly, we’ll do a dessert spin on a Mexican classic of empanadas, as we fill them with cinnamon apples and sweet toppings, before drizzling warm caramel sauce over them to give you a unique version of apple pie in this familiar shell.
