Let's Go to Louisiana with Chef Erica Lippe

Chef Lippe's first class at Brown's Kitchen received RAVE reviews and we are so excited to have her back to teach us some of her favorite recipes from back home in Louisiana.  As a New Orleans native, Chef Erica is going to take you on a trip through cajun and creole flavors and their histories. Louisiana has a cultural autonomy seen in only a handful of our 50 states and its food is a primary expression of that unique culture. Cajun and Creole food is designed for feeding a crowd and Chef Erica will teach you how to do that seamlessly and from scratch, with a few new twists.

Chef Bio:

Erica is a private chef and caterer. She is a graduate of the French Culinary Institute. New to Tallahassee after 6 years in New York City, she has worked in many acclaimed restaurants, including but not limited to The Tao Group’s Beauty and Essex, The Stanton Social and The Diner Group’s Marlow and Daughters.   She served as assistant to The Food Network’s Chopped judge, Chef Chris Santos. Erica operated her private chef and catering company in New York for 4 years, working with a host of publications, brands, and on film, photo, and TV sets. She has cooked privately for countless celebrities, including Nicole Kidman, Mick Jagger, Steve Martin, and the notoriously vegan Alicia Silverstone.  Erica focuses on hyper-local, seasonal, humanely raised, and sustainable foods. She is trained classically in French technique and applies those skills to a vast repertoire of both familiar and ethnic cuisines.
